I know I know, you’re a kale hater. But this salad is seriously about to change your mind.
I am a sucker for anything easy, quick and super healthy on my plate! Sometimes it gets hard after a long work day or busy day in general to have the motivation to cook a really thought out or time consuming meal.
Now, don’t get me wrong, I seriously love to cook! But, I have found ways to make things super quick and delicious that still fulfill my health needs as well. This salad is something I love making for lunch because it literally only takes 10 minutes and it is SO good.
I love using kale because when cooked, it doesn’t shrink down like spinach would so you still have yourself a decent sized salad, as well as the amazing health benefits:
- ANTIOXIDANT DENSE: Kale is particularly rich in beta-carotene (vitamin a) and vitamin C- two of the top antioxidants in the world
- ANTI-INFLAMMATORY- promotes pro-inflammatory omega 6 and anti-inflammatory omega 3 balance
- PROMOTES HEALTHY VISION
- HEART SUPPORT
- DETOXIFICATION- the sulfur and glucosinates in kale both help to detox by removing toxins from the body
- CANCER PREVENTION- glucosinates are also known to aid in fighting off cancer cells and cancer cell growth
So, here is the recipe! Super easy and healthy!
INGREDIENTS:
2 handfulls of kale (de-stemmed)
1 can of chickpeas (drained)
1 large sweet potato
handful dried cranberries
handfull slivered almonds
grated parm
2 tablespoons olive oil
2 tablespoons wheat germ
Let’s make this salad
So, it’s so simple!
First off, prep yourself. Peel, cut, cube and boil your sweet potato. Once it’s cooked, throw your kale in a large pan with the olive oil on medium. As it starts to cook, just throw all other ingredients into the pan, ending with the wheat germ and parmesan. and cook for 3-5 minutes! THAT’S IT. So easy. I hope you guys love it as much as I do!
